Culinary Competation 2007

Our culinary competition had some outstanding entries as usual this year. Judging for the event was done by Davide Pugliasi of Brandywine Bay, Michael Collins of Peter Island Resort and Jan Robinson of Ship to Shore Cookbooks fame. They managed to munch there way through all the entries, and it was hard to pick winners.

We have done up a separate page on our winners for appetizers, entree, and dessert along with a bit of background information on them! Congratulations to all the chefs. The dishes were beautiful, enjoy viewing our picture gallery below of all our dishes!

Culinary Competition

Appetizer:
Amanda Hutchings - ADEIA Tuna Handroll Salad, pickled cucumber, pineapple, carrots, avocado and spicy tuna
Lauren mackin- True North Shrimp and sweet potato cake with homemade citrus aioli
Emily Williams- SWISH * Hot and crunchy Mahi Mahi. Plantain encrusted mahi mahi with mango and lime cioli and mango rum salsa
Joanne Vidler- PAS DE DEUX West Indian Vegetarian Roti, mango and ginger sause, mango chutney, coconut rice with coconut chips
Penny Moors- SABORE Multi colored polenta with smoked wahoo, mago and jalapeno aioli
Nina Groves- ELEKTRA Caribbean Coconut Ceviche
Marsha Mccoskrie- JET STREAM Guava jalapeno creams. Carrs Whole wheat crackers, goya guava paste from Dominician Republic, cream cheese, jalapeno pepper slices

Entree:
Amanda Hutchings- ADEIA * Spiced rubbed pork tenderloin with whipped sweet potatoes, banana johny cakes, adobe sauce and fresh spinach with poppyseed
Melissa Libs- BELLINE 2 Caribbean Shrimp Enchilada with avocado sauce, mango salsa, raisin slaw and sweet burn potatoes
Nina Groves- ELEKTRA Caribbean lobster with coconut and lemon risotto cakes, aubergine slices and petit pans with a citrus pepper medley
Veronica Chamberlain- AKASHA lime and cumin local pork tenderloin with an orange tamarind reduction, avocado blackberry pineapple salsa, with a tania and sweet potato mash
Rochelle- ZINGARA Seared tuna with tropical salsa, jerk sweet potato mash, fried plantain, snap peas and garnished with yucca chips, mango lime coalis and balsamic glaze

Dessert:
Amanda Hutchings- ADEIA Banoffe souffle
Joanne VIDLER- PAS DE DEUX Grenada nutmeg baked cheesecake with freshly whipped cream, spiced rum caramel sauce and dark chocolate butterfly?
Penny Moors- SABORE Naught but nice! Coconut and rhubarb creme brulee with a ginger snap
Nina Groves- ELEKTRA* Tropical Island. Frozen coconut mousse with mango and pineapple fringe floating on a rum sabayon sauce shaded by a tuile palm tree.
